Artisanal pasta maker, Egle Loit, talks kitchens

Egle Loit (@darlingitspasta), an artisanal pasta maker, never fails to amaze with her elegant aesthetic and heavenly plates of pasta. In between running workshops and hosting dinners, Egle found some time to sit down and talk to us about her career and interior style.

Becoming a pasta maker 🍝

“I found love for pasta circumstantially. One day, I walked into a Hackney local Italian restaurant and asked for a job. At first, I went there secretly - I didn't share the fact that I am doing shifts in the evenings and over the weekends to my friends. I wanted to know what it feels like to work in the kitchen, if there was a chance I could somehow work within the industry. I stayed for two years and completed the apprentice training at Westminster during that time. 
I had to make pasta every day at the restaurant. Pasta making is so meditative, though it does require attention at times. It has become one of my favourite ways to spend time and connect with people. Instagram has just been a natural way for me to share, communicate and connect.”

Ups & downs

"The most rewarding part of my job is seeing satisfied people at the table, to experience the pleasure food brings. The most challenging for me is working late nights - I am such an early bird. I go to bed earlier than my grandmother."

The definition of ‘kitchen’

“No-doubt, the kitchen is the heart of home, the centre of my life. I cook when I am sad, and I cook when I am happy. Cooking brings balance and calm to my life.”

An easy recipe: Cavatelli

"Cavatelli makes a beautiful pasta dish with just a simple tomato sauce. Here's how to make Cavatelli Pasta:
  1. Mix 100g of double-milled semolina with 50g of water
  2. Knead for ten minutes until it is silky. 
  3. Let the dough rest for half an hour under a bowl at room temperature. 
  4. Roll small pieces of dough under your thumb, creating little shells."

“I'd describe my interior style as practical, simple & timeless. I can get quite easily bored, but have learned now that good quality and functionality doesn't tire me. Most of the items in my home are thought through and there for a reason. I like to have less, rather than more.”

"If I am not having an americano when working, I make myself either hot water with lemon or rooibos with oat milk."

Instagram as a tool 🔧

"My source of inspo' has to be Instagram. I find it rather relaxing as I am not usually scrolling much, but using it as a tool for inspiration."
